Ingredients:
1 cup cooked quinoa
1 cup shredded carrots
1/4 cup chopped parsley
1/4 cup chopped walnuts
Juice of 1 lemon
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
In a large bowl, combine quinoa, carrots, parsley, and walnuts.
Drizzle with lemon juice and olive oil, then season with salt and pepper. Toss well.

1 teaspoon cumin
1/2 teaspoon turmeric
Salt and pepper to taste
Instructions:
In a large pot, sauté the onion and garlic until soft.
Add carrots, lentils, and spices. Stir for a minute.
Pour in the vegetable broth and simmer for 20–25 minutes, until carrots and lentils are tender.
Blend the soup until smooth and season to taste.
