1. Mix it up
In a mixing bowl, stir together the coconut and sweetened condensed milk. It’s gonna be sticky—totally normal. You’ll end up with a thick, scoopable mixture.
2. Shape the bars
Scoop out small portions and shape them into little bars or logs with your hands. It helps to lightly wet your fingers so the mixture doesn’t stick too much. Place them on a parchment-lined tray.
3. Chill
Pop the tray into the freezer for about 20–30 minutes. This helps firm them up so they’re easier to dip in chocolate later.
4. Melt the chocolate
While the coconut bars are chilling, melt your chocolate. You can do this in the microwave (30-second bursts, stirring in between) or over a double boiler. Stir until smooth.
5. Dip and set
Once the bars are cold and firm, dip each one in the melted chocolate, making sure it’s fully coated. Let the excess drip off, then place back on the tray. Let them sit at room temp or stick them in the fridge to set up faster.
6. Store and snack
These keep well in the fridge for up to a week or in the freezer for a month. Good luck making them last that long.

Notes
Add almonds on top of the coconut before dipping if you want an Almond Joy twist.
