4 large russet potatoes
1 pound steak (sirloin, ribeye, or filet), cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup cooked bacon bits
1/4 cup green onions, sliced
1/4 cup unsalted butter
1/4 cup milk (optional, for creamier potatoes)

Directions:
Preheat your oven to 400°F (200°C). Wash and dry the potatoes, then pierce them several times with a fork. Bake directly on the oven rack for 50-60 minutes or until tender.
While the potatoes bake, season the steak bites with garlic powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Add steak bites and cook for 2-3 minutes per side, or until your desired doneness. Set aside and keep warm.
Once the potatoes are done, cut a slit down the center of each and fluff the insides with a fork. Mix in a pat of butter and a splash of milk if desired for creaminess.
Top each potato with shredded cheese, sour cream, cooked bacon bits, and steak bites. Sprinkle green onions over the top for garnish.
Serve hot and enjoy a hearty, loaded dinner that combines all your favorite flavors!
