Summertime is coming, and with the warm weather come picnics, Barbecues, and neighborhood gatherings. Marinated Cucumbers, Onions, and Tomatoes is a dish that has tons of variations. However, there are none that compare to this recipe. This side dish has a flavor so extreme you won’t be able to make enough. What is more, this dish could be used as a side dish or you could use the vegetables after marinating, in other dishes or salads.
Ingredients :
3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil
Directions:
Combine ingredients in a large bowl and mix well.
Refrigerate at least 2 hours before serving
Instructions :

- Place the vegetables into a large mixing bowl and toss to combine.

Pour the water over the vegetables.
- In a small bowl, combine the oil, vinegar, sugar, basil and salt and pepper to taste. Whisk to combine well, and pour this over the vegetables in the bowl.

Stir to coat the vegetables well and allow to marinate in the fridge for at least two hours before serving.
