- 1 (1 oz) package taco seasoning mix (we recommend Old El Paso or Taco Bell)
- 1 (14 oz) can diced tomatoes with juice
- 6 soft corn tortillas (6-inch size)
- 1 cup of your favorite salsa
- ½ cup shredded Colby cheese (Mexican or taco-style cheese works great too)
Instructions
- Preheat your oven to 350°F (175°C).
- In a deep cast-iron skillet over medium-high heat, brown your ground beef, breaking it up into small pieces while cooking. Drain excess grease.
- Stir in the taco seasoning and diced tomatoes (with juice) into the browned beef.
- Line a 9×13-inch baking dish with half of the tortillas.
- Spoon the ground beef mixture onto the tortillas.
- Top with the remaining tortillas, then spread salsa over the top and sprinkle with shredded cheese.
- Bake at 350°F for 20-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, serve, and enjoy!
