Ingredients:
1 lb (453 g) thinly sliced beef sirloin
1 diced bell pepper
1 finely chopped onion
2 tsp seasoned salt (divided)
1 tsp Montreal steak spice
1 tsp cayenne pepper
16 slices of provolone cheese
4 tortillas
Vegetable oil
Instructions:
Sprinkle the beef with 1 teaspoon of seasoned salt, Montreal steak spice, and half the cayenne pepper.
Heat a small amount of oil in a saucepan over medium-high heat. Sear the steaks and then remove them from the heat.
In the same pan, add a bit more oil and sauté the onions and peppers. Season them with the remaining salt and cayenne pepper. Cook until the vegetables are tender, stirring frequently.
Assemble the quesadillas: Spray a pan with oil and heat it over medium heat. Place a tortilla on the pan, add 4 slices of cheese, and then place the seasoned meat on one side and the sautéed vegetables on the other.
Once the cheese has melted, fold the tortilla and cut it into four portions. Repeat this process.
