β 200g digestive biscuits (or graham crackers), crushed
β 100g unsalted butter, melted
For the Cheesecake Filling:
β 250g cream cheese, softened
β 100g caster sugar
β 2 large eggs
β 2 ripe bananas, mashed
β 1 tsp vanilla extract
β 120ml sour cream
β 1 tbsp plain flour
For the Banana Cream Topping:
β 250ml heavy cream
β 2 tbsp icing sugar
β 1 tsp vanilla extract
β 1 ripe banana, thinly sliced (for topping)
β Optional: extra whipped cream and banana slices for decoration
