Moroccan Couscous Recipe

📝 Ingredients:
🐑 For the meat and broth:
– 1 kg (2.2 lbs) lamb, beef, or chicken (with bones for flavor)
– 2 tablespoons olive oil
– 2 large onions, chopped
– 2–3 tomatoes, grated or finely chopped
– 2 teaspoons ground ginger
– 1 teaspoon ground cinnamon (optional)
– 1 teaspoon turmeric
– Salt and pepper to taste
– A small bunch of fresh cilantro/parsley (tied together)
– 1 can of chickpeas (or soaked overnight)
– Water (enough to cover everything)
For the vegetables (use what’s available):
– 4 carrots, peeled and halved
– 3 zucchinis, halved
– 2 turnips or parsnips
– 1 small cabbage, cut into chunks
– 1 sweet potato or pumpkin (for sweetness)
– Hot green chili (optional, for heat)
🍚 For the couscous:
– 500g (about 3 cups) fine semolina couscous
– 2 tablespoons olive oil or melted butter
– Salt
– Water
– Optional: smen (fermented butter) or regular butter for finishing
