Directions:
1. Melt the butter in a saucepan over medium heat.
2. Add the flour and mix well to form a redhead. Cook for 1 to 2 minutes, stirring constantly.
3. Gradually incorporate the milk while whisking to avoid lumps. Let it thicken slightly.
4. Add the fresh cream and mix until the texture is homogeneous.
5. Reduce the heat to soft and incorporate the grated cheddar, one handle at a time, stirring until it is completely melted.
6. Season with salt, pepper and paprika if you use it. Mix well.
7. Serve immediately with hot fries or other
