Ingredients:
°2 1/2 cups all-purpose flour, plus more for flour
°2 tablespoons baking powder
°1 teaspoon of sugar
°1 teaspoon of salt
°8 tablespoons of cold unsalted butter
°1 cup of milk
°2 tablespoons of salted butter for greasing°
Directions:
Preheat oven to 425 degrees. Sift the flour, baking powder, sugar and salt into a large mixing bowl. Transfer to a food processor. Cut the frozen butter into cubes and add it to the flour, beating 6 or 7 times until it looks crumbly. Return the dough to the bowl, add the curd and stir with a spoon until it forms a rough ball (don’t worry if it’s a little sticky).
Roll out the dough on a floured surface and roll it out into a rough rectangle about 1 inch thick. Gently fold and roll again. Repeat 6 times.
Gently roll out the dough again to form a rectangle. Cut the dough into cookies using a floured mold or cookie cutter. do not twist the knife when cutting; This will cause the edges of the cookie to curl up and not ride up. If you have leftovers, just attach a rectangle and cut out extra cookies.
The biscuit is placed on a baking sheet and placed in the oven. Make sure they are touching. Bake until golden brown, about 10 to 15 minutes. Serves 6 to 8 persons. Drizzle with melted butter and Enjoy!
