Ingredients:

  • 20 rice paper wrappers (6-inch diameter)
  • 1 pound cooked shrimp, finely chopped
  • 1/4 cup chopped chives
  • 2 garlic cloves, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon freshly ground black pepper
  • Olive oil or nonstick cooking spray for greasing
  • Optional: Dipping sauce of your choice

Instructions:

  1. Preheat and Prepare: Set your oven to 375Β°F (190Β°C) and lightly grease a baking sheet.
  2. Mix the Filling: Combine the shrimp, chives, garlic, soy sauce, sesame oil, and black pepper in a bowl until thoroughly mixed.
  3. Soften Wrappers: Dip each rice paper wrapper in warm water for 10 to 15 seconds until pliable, then place on a clean, damp towel.
  4. Add Filling: Spoon a tablespoon of the filling onto the bottom of each wrapper, leaving space around the edges.
  5. Roll: Fold the sides of the wrapper over the filling, then roll tightly like a burrito and place seam side down on the baking sheet.
  6. Bake: Brush or spray the dumplings with olive oil and bake for 20-25 minutes until crispy and golden brown.
  7. Serve: Allow to cool slightly before serving with your preferred dipping sauce.
