Ingredients:
- 20 rice paper wrappers (6-inch diameter)
- 1 pound cooked shrimp, finely chopped
- 1/4 cup chopped chives
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon freshly ground black pepper
- Olive oil or nonstick cooking spray for greasing
- Optional: Dipping sauce of your choice
Instructions:
- Preheat and Prepare: Set your oven to 375°F (190°C) and lightly grease a baking sheet.
- Mix the Filling: Combine the shrimp, chives, garlic, soy sauce, sesame oil, and black pepper in a bowl until thoroughly mixed.
- Soften Wrappers: Dip each rice paper wrapper in warm water for 10 to 15 seconds until pliable, then place on a clean, damp towel.
- Add Filling: Spoon a tablespoon of the filling onto the bottom of each wrapper, leaving space around the edges.
- Roll: Fold the sides of the wrapper over the filling, then roll tightly like a burrito and place seam side down on the baking sheet.
- Bake: Brush or spray the dumplings with olive oil and bake for 20-25 minutes until crispy and golden brown.
- Serve: Allow to cool slightly before serving with your preferred dipping sauce.
