Instructions
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
Step 2: Mix Dry Ingredients
In a medium bowl, combine the flour, baking soda, cinnamon, and salt. Set aside.
Step 3: Cream Butter & Sugars
In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2–3 minutes.
Step 4: Add Egg & Vanilla
Beat in the egg and vanilla extract until combined.
Step 5: Add Dry Ingredients & Apple
Gradually mix in the dry ingredients, stirring until just combined.
Gently fold in the finely chopped apple and optional walnuts/raisins.
Step 6: Scoop & Bake
Use a spoon or cookie scoop to drop rounded tablespoonfuls of dough onto the prepared baking sheet. Space them about 2 inches apart.
Bake for 8–10 minutes or until the edges are golden brown.
Step 7: Cool & Serve
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Enjoy your fresh, warm apple cookies in just 20 minutes—sweet, soft, and packed with fall flavors!
