Step 1: Prepare the Apple Filling
In a medium saucepan over medium heat, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes, or until the apples are softened and the mixture is bubbly.
In a small bowl, mix the cornstarch and water until smooth. Stir the cornstarch mixture into the apples and continue to cook for another 2-3 minutes, or until the filling has thickened. Remove from heat and let the filling cool slightly.
Step 2: Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface in a diamond shape, with one corner pointing towards you. Spoon about 2 tablespoons of the apple filling onto the center of the wrapper.
Fold the bottom corner over the filling, then fold in the sides, and roll up tightly, sealing the edge with a dab of water to ensure it stays closed. Repeat with the remaining egg roll wrappers and filling.
Step 3: Fry the Egg Rolls
In a large skillet or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Carefully place the egg rolls in the hot oil, a few at a time, and fry for 2-3 minutes per side, or until golden brown and crispy.
Remove the egg rolls from the oil and drain on a paper towel-lined plate. Let them cool slightly before serving.
Step 4: Serve
Dust the Apple Pie Egg Rolls with powdered sugar if desired. Serve warm with a side of vanilla ice cream or caramel sauce for dipping.
