Optional add-ins:
- 1/2 cup corn kernels (fresh, canned, or thawed frozen)
- 1/2 cup black beans, rinsed and drained
- 1/2 cup diced bell peppers (any color you prefer)
- 1/4 cup crumbled feta cheese
- 1 jalapeño pepper, seeded and minced for a spicy kick
Instructions:
- In a large bowl, combine the diced avocados, diced tomatoes, sliced red onion, and chopped cilantro.
- In a small bowl, whisk together the lime juice, extra virgin olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the avocado mixture and gently toss until everything is well coated.
- If you’re adding any optional ingredients like corn, black beans, bell peppers, feta cheese, or jalapeño, add them to the salad and toss gently to combine.
