1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
3. In a separate bowl, combine the milk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.
4. Gently fold in the diced apples and melted butter until evenly distributed throughout the batter.
5. Drop spoonfuls of the batter onto the prepared baking sheet, shaping them into small mounds.
6. Bake in the preheated oven for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
7. While the fritters are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
