Baked Mandarin Chicken Recipe
Ingredients:
4 boneless, skinless chicken thighs or breasts
Salt and pepper to taste
1 tbsp olive oil
Mandarin Sauce:
1 cup mandarin orange juice (fresh-squeezed or from canned mandarins)
1 tbsp soy sauce
1 tbsp honey or brown sugar
1 tbsp rice vinegar (or apple cider vinegar)
1 clove garlic, minced
1 tsp grated fresh ginger (or 1/2 tsp ground)
1 tsp cornstarch + 1 tbsp water (slurry for thickening)
Optional: zest of 1 mandarin for extra citrus kick
Optional Garnishes:
Mandarin orange segments
Sliced green onions
Sesame seeds
