Ingredients:
2 salmon fillets (about 180g each)
1 bunch of asparagus, cut into chunks
2 tablespoons of melted butter
Juice of half a lemon
2 garlic cloves, minced
Salt and pepper to taste
1 tablespoon of chopped fresh parsley (optional)
2 lemon slices for garnish
Preparation:
Preheat oven to 200°C (400°F). Line a baking sheet with aluminum foil.
Prepare the foil parcels: Cut two large pieces of aluminum foil. Place each salmon fillet on a piece of foil. Add the chopped asparagus around the fillets, spreading them evenly. Prepare the Lemon Garlic Butter Sauce: In a small bowl, melt the butter in the microwave or in a small saucepan. Add the lemon juice, minced garlic, salt, and pepper. Mix well.
Pour the sauce over the salmon and asparagus: Drizzle the Lemon Garlic Butter Sauce generously over each parcel. Place a lemon slice on each salmon fillet for an extra burst of flavor.
