1. Preheat Oven:
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. Cook Beef Mixture:
In a skillet over medium heat, cook the ground beef with chopped onion and minced garlic until browned. Drain excess fat.
3. Make the Sauce:
In a bowl, combine:
Cream of mushroom soup
Milk
Sour cream (if using)
Salt, pepper, and paprika
Mix until smooth.
4. Layer the Casserole:
Layer half the sliced potatoes in the baking dish.
Top with half the cooked beef mixture.
Spoon half the soup mixture over the beef.
Sprinkle with some cheddar cheese.
5. Repeat Layers:
Repeat with remaining potatoes, beef, soup mixture, and top with the rest of the cheese.
6. Bake:
Cover the dish with foil and bake for 60 minutes.
Remove foil and bake an additional 15–20 minutes until potatoes are tender and the top is golden and bubbly.
7. Let Rest and Serve:
Allow the casserole to rest for 5–10 minutes before serving. Garnish with chopped parsley if desired.
