Instructions:

1. Prepare the beef: Marinate the beef slices for at least 15 minutes in 1 tbsp soy sauce. This helps tenderize the meat.
2. Stir-fry the beef: Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the marinated beef and stir-fry until browned and cooked through. Remove from the wok and set aside.
3. Scramble the eggs: Add the remaining vegetable oil to the wok. Add the beaten eggs and scramble until cooked but still slightly moist. Remove from the wok and set aside.
4. Stir-fry vegetables: Add the minced garlic to the wok and stir-fry for about 30 seconds until fragrant. Add the peas and carrots and stir-fry for 2-3 minutes until heated through.
5. Combine and finish: Add the cooked rice to the wok. Break up any clumps of rice. Stir-fry for 2-3 minutes until heated through. Add the cooked beef and scrambled eggs.
6. Make the sauce: In a small bowl, whisk together the remaining soy sauce and oyster sauce (if using). Pour the sauce over the rice mixture. Stir-fry for 1-2 minutes until the sauce is evenly distributed and the rice is coated.
7. Garnish and serve: Stir in the sliced green onions. Season with salt and pepper to taste. Serve immediately.

Tips and Variations:

– For extra flavor, add a tablespoon of sesame oil or a dash of ginger.
– Other vegetables such as mushrooms, bell peppers, or corn can be added.
– Day-old rice works best for fried rice as it’s drier and less likely to become mushy.
– If using fresh vegetables, adjust cooking time as needed.
– For a spicier dish, add a pinch of red pepper flakes or a dash of chili garlic sauce.
