Instructions:
Heat olive oil in a 5 liter pot or skillet. Add the onion and sauté for a few minutes until softened. Crumble the ground beef and add the garlic to the pot with the onions and cook until the beef is no longer pink.Drain off as much fat as possible. (I use paper towels to absorb grease).
Season the meat with salt and pepper.
Add beef broth, tomato soup and water. Bring to a boil over medium-high heat, then reduce heat and simmer (medium to medium-low).Add vegetables and continue to simmer until hot; approx. 6-8 minutes. Add the cooked noodles.
Divide between bowls, garnish with parsley if desired and serve hot.
*If you are cooking the noodles INSIDE the soup, add them to the vegetables and simmer until the noodles are tender.
Notes:
If you’re short on time or simply prefer to make the soup in one pot, you can cook the noodles in the broth while it simmers.Depending on the temperature and type of pasta, it takes between 10 and 15 minutes. Keep in mind that the longer the pasta rests, it will become soggy, making it difficult to leave any leftovers.
