Instructions
Brown the Beef:
In a large pot over medium-high heat, brown the beef chunks on all sides. Remove and set aside.
Sauté Onion & Add Ingredients:
In the same pot, sauté the chopped onion until soft. Return the beef to the pot.
Add Liquids & Seasonings:
Stir in the beef broth, tomato paste, soy sauce, salt, pepper, and bay leaf.
Simmer:
Cover and simmer for 45 minutes, stirring occasionally.
Add Vegetables:
Add the chopped potatoes and sliced carrots. Simmer uncovered until vegetables are tender (about 20–25 minutes).
Serve:
Remove the bay leaf. Serve hot with crusty bread or over rice if desired.
