- 250g sweet potato
- 3 cups water
- ¼ teaspoon vanilla extract (optional)
- ¼ cup almond flour
- ⅓ cup sesame flour
Step-by-Step Preparation
1. Prepare the Sweet Potato:
Peel and chop the sweet potato into small cubes.
2. Cook Thoroughly:
Place the cubes in a pot with 3 cups of water and cook until they are very soft. Keep the cooking water—it will be used in the next step.
3. Blend the Mixture:
In a blender, add the reserved cooking water, the hot sweet potato cubes, vanilla extract (if using), almond flour, and sesame flour. Blend for about 2 minutes until the texture is creamy and smooth.
4. Strain and Serve:
Pour the mixture through a fine mesh strainer or cheesecloth to remove any pulp. Enjoy the milk immediately, or store it in the refrigerator for up to three days.
