3/ Add the dry ingredients to the mashed banana along with the milk and vanilla. Stir just until combined – do not overmix.
4/ Let the batter rest for 5 minutes while you heat 1/4 inch of oil in a skillet over medium heat.
5/ Scoop spoonfuls of batter into the hot oil, flattening them slightly. Fry for 2-3 minutes per side until golden brown.
6/ Drain fritters on a paper towel-lined plate and dust with powdered sugar before serving if desired.
7/ Serve warm, garnished with whipped cream, maple syrup, ice cream, or other toppings of choice.
