- Prepare the Zucchini:

- Use a special grater to grate the zucchinis into fine shreds.
- Place the grated zucchini in a colander and sprinkle with a little salt. Let it rest for about 10 minutes to draw out excess moisture.

- In a large mixing bowl, beat the 3 chicken eggs.

- Add the grated and squeezed zucchini to the bowl.

- Add the 3 tablespoons of flour and mix well until the ingredients are fully combined.
- Stir in the finely chopped spring onions.

- Heat a drizzle of olive oil in a large frying pan over low heat.
- Scoop spoonfuls of the zucchini batter into the pan, flattening them slightly with the back of the spoon to form fritters.
- Cover the pan with a lid and cook the fritters for 4-5 minutes on each side, or until golden brown and cooked through.
