    1. Prepare the Zucchini:
        • Use a special grater to grate the zucchinis into fine shreds.
        • Place the grated zucchini in a colander and sprinkle with a little salt. Let it rest for about 10 minutes to draw out excess moisture.

      • After resting, squeeze out the excess liquid from the zucchini using your hands or a clean kitchen towel.
    2. Mix the Batter:
        • In a large mixing bowl, beat the 3 chicken eggs.

        • Add the grated and squeezed zucchini to the bowl.
        • Season with salt to taste.
        • Add the 3 tablespoons of flour and mix well until the ingredients are fully combined.

      • Stir in the finely chopped spring onions.
    3. Cook the Fritters:
        • Heat a drizzle of olive oil in a large frying pan over low heat.

      • Scoop spoonfuls of the zucchini batter into the pan, flattening them slightly with the back of the spoon to form fritters.
      • Cover the pan with a lid and cook the fritters for 4-5 minutes on each side, or until golden brown and cooked through.
    1. Serve:
      • Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
      • Serve hot, garnished with additional chopped spring onions if desired.
