Directions:
In a mixing bowl, stir together peanut butter, chopped peanuts, salt, and vanilla until well combined. Roll mixture into small balls (about 1-inch). Place on parchment-lined tray and chill in freezer for 30 minutes.
Meanwhile, melt white chocolate chips and butterscotch chips in a microwave-safe bowl in 30-second increments, stirring between each until smooth. Stir in maple syrup and maple extract.
Remove peanut butter balls from freezer and dip each into the maple coating using a fork or dipping tool. Let excess drip off before placing back on parchment.
Let the coating set at room temperature or refrigerate to speed up the process.
Store in an airtight container at room temp or chilled, depending on preference.
