Instructions:
Sear the Beef:
Heat olive oil in a large pot over medium-high heat. Season the beef with salt & pepper, then sear on all sides until deeply browned. Remove and set aside. Build the Base:
In the same pot, sauté onions and garlic until softened and golden. Stir in tomato paste and cook for another minute. Pour in beef broth, Worcestershire sauce, and thyme. Add the seared beef back to the pot. Slow Simmer:
Cover and let it simmer on low for 2.5 to 3 hours, until the beef is fall-apart tender. Shred the beef into bite-sized pieces. Prepare the Cheese Bread:
Toast bread slices under a broiler for a few minutes. Top with shredded cheese and broil again until melted and bubbly. Serve & Enjoy:
