Heat a large 12-inch skillet over medium heat and add the diced bacon. Cook until it’s nice and crispy, then transfer to a paper towel-lined plate to drain off the excess grease.

Step 03

In the same skillet with the bacon fat, add the breakfast sausage and cook, breaking it up as you go, until it’s completely browned and cooked through. Transfer to the plate with the bacon.

Step 04

In a bowl, whisk together the eggs and cream until well combined. Heat the skillet again over medium heat and add 1 tablespoon of butter. Pour in the eggs and gently scramble with a spatula until they’re just set and fluffy. Season with salt and remove from heat.

Step 05

Slice the Hawaiian rolls in half horizontally and place the bottom halves on a baking sheet or large baking dish.

Step 06

Start layering your breakfast goodness! Spread the scrambled eggs evenly over the bottom buns, then top with the cooked sausage and crispy bacon. Place the cheese slices over the meat, then crown with the top halves of the rolls.

Step 07

In a small bowl, melt the remaining 2 tablespoons of butter and stir in the maple syrup until combined. This sweet and savory combo is what makes these sliders special!

Step 08

Brush the maple butter mixture over the tops of the sliders, then sprinkle with everything bagel seasoning if using. Bake for 15 minutes until the cheese is melted and the tops are golden. If they start browning too quickly, just cover with foil.

Notes

  1. These handheld breakfast sandwiches are perfect for feeding a crowd or meal prepping for busy mornings.
  2. The maple syrup glaze on top adds a touch of sweetness that pairs perfectly with the savory fillings.
  3. You can assemble these completely the night before and just bake them fresh in the morning.
  4. Hawaiian rolls are ideal because they’re soft and slightly sweet, but any slider rolls will work.
  5. These keep well in the fridge for 3-4 days and reheat beautifully in the microwave.
