1. Prepare the Chicken:

  • Using a sharp knife, dice the chicken into 1/3″ thick pieces and place them in a large mixing bowl. Partially freezing the chicken breast makes slicing easier.

2. Mix the Batter:

  • To the chicken, add eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and black pepper. Stir until well combined. Cover and refrigerate for 2 hours or overnight to meld the flavors.

3. Cook the Fritters:

  • Heat a large non-stick pan over medium heat with 2 tablespoons of oil. Once hot, spoon the chicken mixture into the pan, flattening slightly. SautΓ© for 3-4 minutes on one side, then flip and cook for another 3 minutes, or until golden brown and cooked through. Repeat with the remaining mixture, adding more oil as needed.

4. Prepare the Aioli:

  • While the fritters cook, mix together the aioli ingredients in a small bowl until smooth.

5. Serve:
