Prepare the Sauce
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, red pepper flakes, and cornstarch. Set aside.
Cook the Broccoli
Blanch the broccoli in boiling water for 30 seconds. Drain and rinse with cold water to stop cooking.
Stir-Fry the Mushrooms
Heat the cooking oil in a large skillet or wok over medium-high heat. Add the mushrooms and cook until they release their moisture and start to brown.
Add Garlic and Broccoli
Add the minced garlic to the mushrooms and cook for 30 seconds until fragrant. Add the blanched broccoli and stir-fry for 2–3 minutes.
Add the Sauce
Pour the prepared sauce over the vegetables. Stir continuously until the sauce thickens and coats the broccoli and mushrooms evenly.
Serve
Remove from heat. Taste and adjust seasoning with salt and pepper if needed. Serve immediatel
