1 package of turkey sausage (about 1 to 1.5 pounds), cut into smaller pieces
Freshly made apple-kraut (16-oz), drained
6 small sweet potatoes, quartered
1 teaspoon caraway seeds
1 bay leaf
1/2 cup apple cider
Salt and pepper to taste
Optional: 1 diced apple for added sweetness
Instructions
1. Grease the slow cooker, then place the apple-kraut at the bottom, followed by sweet potatoes and turkey sausage. Optionally, for added flavor, brown the turkey sausage in a pan before placing it in the slow cooker.
2. Pour apple cider over the contents in the slow cooker. Add caraway seeds, bay leaf, and, if using, the diced apple. Season generously with salt and pepper.
3. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours.
This recipe introduces turkey sausage as a leaner and seasonally fitting protein, complementing the sweetness of the apples and sweet potatoes and the tangy flavor of the apple-kraut.
