Start by boiling the chopped potatoes in a large pot for about 15 minutes or until they’re tender. Once done, drain the potatoes and mash them with butter, heavy cream, and parmesan cheese. Don’t forget to season with salt and pepper to your liking.
While the potatoes are cooking, heat olive oil in a skillet over medium-high heat. Take your pork chops and season them with salt, pepper, and a sprinkle of thyme. Cook the pork chops in the skillet for 4-5 minutes on each side until they’re golden brown and cooked through. Once done, remove them from the skillet and set aside.
