Pour in the beef broth and stir in the Italian seasoning and smoked paprika.
5. Simmer
Bring the soup to a gentle boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the vegetables are tender and flavors have melded together.
Taste and adjust seasoning with additional salt and pepper if needed.
6. Serve
Ladle the soup into bowls and garnish with fresh parsley or grated Parmesan cheese if desired.
Serve with crusty bread or a side of crackers for a complete, comforting meal.
