Instructions:
1. In a large skillet or pot, heat olive oil over medium heat. Add ground beef or sausage and cook until browned.
2. Add diced onion, bell pepper, and minced garlic. Cook until vegetables are softened.
3. Stir in chopped cabbage and cook for 5–7 minutes, until it starts to wilt.
4. Add diced tomatoes (with juice), rice, beef broth, Cajun seasoning, smoked paprika, cayenne (if using), salt, and pepper. Stir to combine.
5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, or until the rice is tender and the liquid is absorbed.
6. Remove from heat, let rest 5 minutes. Fluff with a fork.
7. Garnish with chopped parsley and serve hot.
