Rinse the cauliflower, pat dry, and divide into small florets.
In a bowl, combine olive oil, apple cider vinegar, garlic, chili, turmeric, salt, and pepper. Mix thoroughly.
Add the cauliflower to the marinade and coat well with the spices.
Transfer to a jar or airtight container and let rest in the refrigerator for at least 4 hours (preferably overnight).
Gently sprinkle with fresh herbs before serving.
