Instructions:
1/ Preheat the Oven:
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
2/ Prepare the Onions:
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced red onions and sauté them until they are soft and translucent, about 5-7 minutes. Season with salt and pepper to taste. Set aside.
3/ Toast the Bread:
Place the slices of bread on the prepared baking sheet and drizzle them with the remaining olive oil.
Toast the bread in the preheated oven for about 5-7 minutes, or until it is lightly golden and crispy.
4/ Assemble the Toasts:
Remove the toasted bread from the oven and top each slice with a portion of the sautéed onions, spreading them evenly. Then, sprinkle the grated or sliced cheese over the onions.
5/ Bake the Toasts:
Return the baking sheet to the oven and bake the cheese and onion toasts for another 5-7 minutes, or until the cheese is melted and bubbly.
6/ Serve:
Remove the toasts from the oven and let them cool slightly before serving. You can sprinkle them with a pinch of dried herbs for extra flavor if desired. Enjoy your cheese and red onion on toast warm!
