Instructions
Preheat oven to 375°F (190°C).
Sauté garlic and mushrooms:
Melt butter in a skillet over medium heat. Add garlic and sauté for about 1 minute until fragrant. Add chopped mushrooms, thyme, parsley, salt, and pepper. Cook for 5–7 minutes until browned and liquid evaporates.
Make the filling:
In a bowl, combine the sautéed mushroom mixture with cream cheese and mozzarella. Mix well.
Stuff the chicken:
Cut a pocket into each chicken breast. Fill generously with the mushroom-cheese mixture.
Assemble and bake:
Place the stuffed chicken breasts in a greased baking dish. Sprinkle the tops with grated Parmesan cheese.
Bake for 25–30 minutes, or until the chicken is fully cooked and juices run clear.
Garnish with freshly chopped parsley before serving.
