Grease a muffin tin with melted butter or non-stick spray to prevent sticking.
Prepare the Potato Mixture:
In a large bowl, combine the mashed potatoes, shredded cheddar cheese, Parmesan cheese, eggs, sour cream, milk, green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until everything is well combined and the mixture is smooth.
Form the Puffs:
Using a spoon or ice cream scoop, divide the mashed potato mixture evenly into the muffin tin, filling each cup almost to the top.
Sprinkle breadcrumbs evenly over the tops of each puff to give them a nice crispy crust.
Bake:
Bake the potato puffs in the preheated oven for 20-25 minutes, or until the tops are golden brown and crispy.
Serve:
Once baked, remove the puffs from the muffin tin and let them cool for a minute before serving.
You can serve them with extra sour cream or a drizzle of melted cheese on top for added flavor.
