Steps
Preheat the oven and cook the tater tots according to package instructions until they are golden and crispy.
In a skillet over medium heat, brown the ground beef and season with salt and pepper to taste. Once fully cooked, drain any excess grease.
In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix until well combined.
Warm the flour tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.
Spoon a generous portion of the filling onto the center of each tortilla. Drizzle chipotle sauce over the filling and add a dollop of sour cream.
Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito. Place in a baking dish, sprinkle with additional cheese, and bake until the cheese is melted and bubbly.
Remove from oven and garnish with diced tomatoes, chopped green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce on the side.
Tips
Warming the tortillas helps prevent them from cracking when assembling the burritos.
You can substitute the ground beef with ground turkey or a plant-based alternative for different flavor or dietary preferences.
Slightly crushing the tater tots helps them distribute better in the filling and makes rolling easier.
