In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, salt, black pepper, and Worcestershire sauce. Mix until everything is evenly combined.
Add half of the chopped parsley and mix again.
Assemble the Meatloaf Bites:
Take about 2 tablespoons of the meat mixture (for mini bites) or 4 tablespoons (for larger bites) and flatten it in your hand.
Place a small amount of grated cheddar cheese in the center and fold the meat around it, forming a ball that fully encases the cheese.
Place each ball into the greased muffin tin, pressing down to form a flat top.
Glaze and Bake:
In a small bowl, mix together ketchup and mustard to make a tangy glaze.
Spoon a small amount of this glaze over each meatloaf bite, spreading it evenly.
Bake in the preheated oven for 20-25 minutes, or until the meat is fully cooked and the cheese is gooey.
Serve:
Once baked, remove the meatloaf bites from the oven and let them cool for a few minutes.
Use a small spatula or butter knife to gently lift each bite out of the tin.
Arrange them on a platter and garnish with the remaining chopped parsley.

Make Ahead: Prepare the bites ahead of time, cover the muffin tin, and refrigerate for up to 24 hours before baking.
