🥄 Instructions (optional suggestion):
Place grated zucchini in a clean towel and squeeze out excess moisture.
In a large bowl, combine zucchini, carrot, cheese, eggs, green onion, salt, pepper, and garlic if using.
Mix well until all ingredients are evenly combined.
Heat a non-stick skillet over medium heat with a little oil.
Scoop spoonfuls of the mixture into the pan and flatten gently.
Cook for 2–3 minutes on each side or until golden brown and cooked through.
Serve warm with sour cream or yogurt dip if desired!
