Directions:
1. Preheat oven to 320°F (160°C). Grease a casserole dish and add raw rice.
2. Slice chicken and place it over the rice. Add chopped onion and optional mushrooms and spinach.
3. Mix cream of mushroom soup, dry soup mix, and water. Season to taste and pour over the ingredients.
4. Cook for 2 hours. Let it cool for 10-15 minutes before serving.
Tips:
– Use regular white or brown rice if Arborio or Bomba rice is not available.
– Make your own dry onion soup mix and cream of mushroom soup if needed.
– Customize with other veggies, but be mindful of added liquids.
