Roll out the puff pastry or pie crust to fit your baking dish (a small individual casserole dish or ramekin works well).
If you’re using puff pastry, you can cut the pastry into a shape to fit the top of the dish, leaving a small overhang.
Assemble the pie:
Spoon the chicken and vegetable mixture into your baking dish, ensuring an even layer.
Top with the prepared puff pastry or pie crust. Press the edges down to seal, and trim off any excess dough.
If you’d like a golden, glossy finish, brush the top of the pastry with a beaten egg.
Bake:
Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
Let it cool for a few minutes before serving.
