Sauté the aromatics – In a large pot, heat oil over medium heat. Sauté garlic, onion, and ginger until fragrant.
Cook the chicken – Add the chicken pieces and cook until lightly browned. Pour in fish sauce and stir well.
Simmer the broth – Add enough water to cover the chicken. Drop in the chicken cube. Bring to a boil, then lower the heat and simmer for 20 minutes until the chicken is tender.
Add the vegetables – Toss in the patola and cook for 2-3 minutes. Then, add the pechay and let it soften.
Cook the noodles – Add the misua and stir gently. Cook for about 2 minutes, as misua cooks quickly.
Season & Serve – Adjust the taste with salt, pepper, sugar (if using), and liquid seasoning. Sprinkle with spring onions and serve hot!
