Ingredients:
1 lb ground beef
1 small onion, chopped
2 cloves garlic, minced
1 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika (optional)
2 (7-oz) cans whole green chilies, drained and split open
2 cups shredded Monterey Jack cheese
1 cup shredded cheddar cheese
4 large eggs
1 cup milk
1/4 cup all-purpose flour
1/2 tsp baking powder
Instructions:
- Preheat oven to 350°F. Grease a 9×13-inch baking dish.
- Cook the beef: In a skillet over medium heat, cook the ground beef, onion, and garlic until beef is browned. Drain excess grease and season with cumin, salt, pepper, and paprika.
- Layer the chilies: Spread half of the green chilies in the bottom of the baking dish. Top with half of the shredded cheese, then spread the beef mixture evenly over it. Layer with the remaining chilies and cheese.
Make the egg mixture: In a bowl, whisk together eggs, milk, flour, and baking powder until smooth. - Pour and bake: Pour the egg mixture over the layers in the baking dish. Bake uncovered for 35-40 minutes or until the top is golden brown and set.
- Let it rest for 5-10 minutes before slicing. Serve warm with salsa, sour cream, or avocado
