Preparation
1-Peel the potatoes, cut them into wedges and put them in a bowl.
2-Cook them for a few minutes in boiling salted water, stirring occasionally.
3-In the meantime, finely chop the parsley and garlic with a cutting board and knife.
4-Pour the chopped mixture into a small bowl and add the oil, vinegar, paprika and mix to obtain a homogeneous emulsion.
S-Drain the potatoes and put them in a bowl.
6-Let’s season them with the flavored oil, mixing so as to distribute it evenly over all the potatoes.
7-Let’s place them on a baking tray lined with baking paper, trying to keep them in a single layer, then sprinkle them with a little breadcrumbs.
Put them in the oven and cook in a preheated fan oven at 180 °C for 45 minutes.\
8-The chimichurri potatoes are ready, let’s put them on a serving dish and serve them!
