- Line a 9-inch square baking pan with parchment paper, leaving an overhang for easy removal.
- In a heavy-bottomed saucepan, combine sugar, butter, evaporated milk, and salt over medium heat. Stir continuously until the mixture comes to a boil.
- Once boiling, continue stirring and let it boil for 4-5 minutes, making sure to reach the soft-ball stage (about 234°F or 112°C on a candy thermometer).
- Remove the saucepan from heat and add vanilla extract, chocolate chips, and nuts (if using). Stir vigorously until the chocolate is fully melted and the mixture is smooth.
- Pour the fudge into the prepared pan, spreading it evenly.
- Allow the fudge to cool at room temperature until set. This may take a few hours.
- Once set, lift the fudge out of the pan using the parchment paper overhang, and place it on a cutting board.
- Cut the fudge into squares and store in an airtight container at room temperature.
