Directions:
1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish.
2. On a lightly floured surface, unroll the cinnamon rolls and flatten each one into a thin, rectangular sheet using a rolling pin.
3. In a saucepan, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes until the apples soften.
4. Stir in cornstarch mixed with water and cook for another 2-3 minutes until thickened. Remove from heat and mix in vanilla extract. Let cool.
5. In a mixing bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth. Fold in whipped cream and set aside.
6. Layer 1/3 of the flattened cinnamon rolls in the bottom of the prepared dish, trimming as needed to fit.
7. Spread half of the apple mixture over the cinnamon roll base, followed by half of the cream cheese layer.
8. Repeat the layering process, finishing with a final layer of cinnamon roll dough on top.
9. Bake for 30-35 minutes, until golden brown and bubbling around the edges.
10. Let cool slightly, then drizzle with caramel sauce and reserved cinnamon roll icing.
