Step 1: Prepare the Cinnamon Butter Filling and Flatten the Bread
In a small bowl, mix together butter, light brown sugar, and ground cinnamon until smooth and well combined.
Remove the crusts from each slice of bread, then use a rolling pin to flatten the slices into thin, flat pieces.
Spread a thin layer of the cinnamon butter mixture on each flattened slice of bread, then roll them tightly into logs.
Step 2: Make the French Toast Egg Mixture
In a separate bowl, whisk together the eggs, milk, and vanilla extract.
Dip each cinnamon-butter-filled roll into the egg mixture, making sure to coat each roll completely, but without soaking.
Step 3: Fry the Rolls
In a skillet over medium heat, melt 1-2 tablespoons of butter.
Add the dipped rolls to the skillet and cook, turning occasionally, until all sides are golden brown and crispy, about 2-3 minutes per side. Remove from the skillet and set aside.
Step 4: Coat the Rolls
In a small bowl, combine the granulated sugar and cinnamon.
Roll the freshly fried French toast sticks in the cinnamon sugar mixture until fully coated. Set aside while you prepare the icing.
Step 5: Make the Cream Cheese Icing
In a bowl, mix together the softened butter, cream cheese, and confectioners’ sugar until smooth and creamy.
Transfer the icing to a piping bag or serve it in a small bowl for dipping.
Step 6: Serve and Enjoy
Drizzle the cream cheese icing over the cinnamon French toast sticks, or serve the icing on the side for dipping.
