In a bowl, combine graham cracker crumbs, sugar, and melted butter until evenly moistened.

2. Make the Filling

In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy (no lumps!).

Add the sour cream and vanilla extract, mixing until fully combined.

3. Bake the Cheesecake

Pour the filling over the cooled crust and smooth the top.

Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour (this prevents sinking).
4. Chill & Serve

Remove from the oven and cool completely at room temperature.
