  1. Preheat oven to 400Β°F.
  2. Lay out egg roll wrappers and divide corned beef, sauerkraut, Swiss cheese, and Russian dressing evenly among them.
  3. Roll up each wrapper, folding in the sides, and seal with a dab of water.
  4. Place the egg rolls seam-side down on a greased tin foil tray.
  5. Lightly spray the tops of the egg rolls with cooking spray.
  6. Bake for 15-20 minutes or until golden brown and crispy.
  7. Serve with additional Russian dressing for dipping.
